Castel Mimi expands its successful The Governor collection with Saperavi Forte, a mature and ambitious interpretation of the noble Georgian Saperavi grape variety through the lens of Moldova’s unique terroir. Crafted from hand-harvested and carefully selected grapes grown in the estate’s vineyards near the village of Speia, close to the Dniester River, the wine benefits from a distinctive microclimate and soils rich in black earth, sand, and gravel. The aromatic profile is deep and expressive, revealing layers of ripe black fruits, spices, dark chocolate, and elegant oak notes. Aged for 24 months in prestigious Radoux Omega French oak barrels, the wine achieves remarkable complexity, balance, and ageing potential. The unique barrel toasting enhances the natural strength of the Saperavi grape, transforming it into a refined and harmonious composition. Saperavi Forte is a wine that rewards patience; as it breathes in the decanter, it gradually unveils greater depth, intensity, and character, delivering an evolving tasting experience. The name Forte is more than a title—it is a statement of strength, personality, and confidence. It pairs exceptionally well with dry-aged beef, roasted lamb, game dishes, and aged hard cheeses. For the best experience, serve at 16–18°C (61–64°F) and decant for 30–60 minutes before enjoying.
